Made up 2 cups of vege stock with a new find from Williams-Sonoma. Quick and easy stock when in a hurry:) Also it’s awesome because the boxed stuff lasts for a few days after opening. If you need a small batch this is great. |

Steamed up the giant cauliflower. Kids ate some steamed and I used the rest for a soup. |

Put the broth and cauliflower plus salt and pepper into my Vita-mix. If you haven’t heard of this machine look into it! It really is amazing! I should be a sales person with how many I’ve sold! haha! After pining after this thing for a while..it’s pricey…I finally gave in. Research proved it to be the best in my opinion. If you are ever wanting one let me know…I found a hook up! I’m thrifty and rarely buy things at full price. -Put it on high for 3-4 minutes and it will be boiling hot. The speed of the blender heats the contents. |

My quickie soup ended up being delicious! The yellow cauliflower has a corn like taste. It was surprisingly good! I figured I’d need a few more ingredients, but didn’t end up using them. It tasted so creamy even though it was dairy free:) The kids LOVED it…which I guess doesn’t say much! HAHAHA. P.S.-People ask me how I get my kids to eat so many veggies… After running them ragged, come inside and plop the veggies in front of them. They will be starving and since it’s the only choice, they will eventually eat it. They’ll learn to deal if it’s their only option! I’m not mean all the time though! I throw in a prune every now and then!!!! |
My goodness that soup looks good! Did you grow the cheddar cauliflower yourself? And I can remember as a kid eating what was on the table…if I didn't I would not have known that I liked anything other than chicken fingers…the only thing I would not try to eat as a child was shrimp….now I love it and I think man I could have been eating it all this time…so funny.

I love my Vitamix too! Just this morning my three year old was crying because he didn't want a fruit smoothie, he only wanted a green smoothie – it's SO worth the cost for a Vitamix!
I saw an industrial strength Vitamix at Williams and Sonoma and it was pricey. I've seen some older models selling on Amazon for a little cheaper. I hear they last forever and if they do break down the company is pretty good about fixing it. I'm still debating whether or not I want to spend the money on one. I tend to buy kitchen appliances, use them once or twice and never use it again. Where did you get yours? I read about them in a book I recently read called "Misinformed About Food", it's a good book and very informative. I now will only buy grass fed beef after learning about how unhealthy the beef is sold in most stores.

Cheddar cauliflower? That soup stock? That magical blender? Why don't I know these things?
Each one is calling my name, how can I not respond ;). I was in Bed Bath & Beyond today and I saw that Vitamix. (Good choice with the RED!) I read all about it, pretty impressive. It truly is an extra set of hands in the kitchen, have you named yours? I named my Kitchen Aid for that reason.
I'll be hittin you up for that 'hook-up' in say…2015!
